Along with Spanish Rice we also have an Easy Mexican Rice recipe. What is the difference? Spanish rice and Mexican rice are very similar, but there are some differences between them. Spanish rice has a stronger aroma, sweet and savory flavor as well as its golden color that comes from the ingredient saffron. This Spanish Rice recipe also has the addition of peas and carrots. Mexican rice has a milder aroma that is more delicate, and it gets its primary flavor from ground cumin seeds. Both have onions and tomatoes and are delicious.


Dice carrot and onion. Heat a large skillet on medium heat with vegetable oil, add carrots and onions. Sauté until softened, approximately 7-8 minutes.

Add rice to the skillet sauteing for a couple minutes.


Stir in cumin and saffron.



Next add in 2 cups of chicken broth and 1 cup of tomato sauce. Bring to a boil, reduce heat, cover and simmer to 20-30 minutes stirring occasionally until rice is tender and liquid is absorbed.

Just before rice is done add in 3/4 cup of frozen peas, simmering until peas are heated.

Serve and enjoy!
